INGREDIENTS * 1½ lbs lean ground beef * 1 small onion, diced * 3 garlic cloves, minced * 2 cups red enchilada sauce * 1 can (15 oz) black beans, drained * 1 cup frozen corn * 1 can (4 oz) diced green chilies * 8 small corn tortillas, cut into strips * 2½ cups shredded Mexican cheese blend * 1 tbsp chili powder * 1 tsp ground cumin * ½ tsp smoked paprika * ½ tsp salt * ½ tsp black pepper * 2 tbsp chopped fresh cilantro * 2 green onions, sliced INSTRUCTIONS 1. Brown ground beef with onion in a skillet over medium heat. 2. Drain excess fat and stir in garlic, chili powder, cumin, paprika, salt, and pepper. Cook for 1 minute. 3.
