Creamy Pumpkin Sauce Pasta - 1 lb pumpkin, deseeded and peeled - 1 box of pasta - 2 tsp salt - 1 tbsp avocado oil - 1/2 small red onion, finely diced - 1 lb sausage- I used Calabrian Chili pork sausage from @Lottie’s Meats - INSANELY good - 2 cloves minced garlic - 1 1/2 tsp dried sage - 1 cup chicken stock - 2 tbsp tomato paste - 3/4 cup of milk - 2/3 cup grated parmesan cheese - 1/2 tsp cracked pepper INSTRUCTIONS: - Prepare you pumpkin and add it to a large pot of water - you will use this to cook your pasta as well. - Cook the pumpkin: bring the pumpkin and water to a boil then cook for 7-10 minutes until very soft. Use a slotted spoon to transfer it to a blender & blend until smooth. (Add some stock or water if needed) - Add the pasta to the pumpkin water with salt and cook. - While pasta is cooking add oil to skillet over medium heat…once oil is heated add the onion and sausage. Break sausage apart with a wooden spoon. Cook until sausage is browned. - Add garlic and sage - stirring for 1 minute - Add the chicken stock and deglaze the pan. Once pan is deglazed, add tomato paste, pumpkin puree and milk. - Bring the sauce to a simmer and cook 3-4 minutes - Add the parmesan cheese and pepper and stir until it’s melted through - Add the pasta to the sauce and cook for another minute. #pumpkinrecipe #easypumpkinpasta #EasyRecipe #halloweenrecipe #pastarecipe" has 1,063,186 views, 212,402 likes, 520 comments, 7,666 shares in the public metrics captured by this index.
