Recipe: @fitmittenkitchen * 2/3 cup graham cracker crumbs - can easily sub GF graham crackers to make gluten-free! I do this when I’m making for my husband * 2 1/2 tbsp butter - softened * 8 oz cream cheese - softened * 1/2 cup Greek yogurt * 1/4 cup granulated sugar * 1 egg * 1 egg white * 1/2 tbsp lemon juice * 1/2 tsp vanilla Instructions * preheat oven to 325 and line muffin tin with cupcake liners * Make the crust: in small blender or food processor blend together the crumbs and softened butter * Evenly divide mixture into cupcake lines and flatten with a spoon * Bake for 8 minutes and let cool for 10 * Make the filling- use a mixer to whip the cream cheese until light and fluffy * Add the sugar and yogurt and beat until smooth * Add the egg, egg white, vanilla and lemon juice and beat until combined * Distribute filling evenly into liners with the crust and bake for 15-20 minutes until the edges are set and middle moves slightly * Remove from oven and let pan cool to room temperature then put in the fridge for 2 hours.
