@on_todays_bake's TikTok video "Baked Smothered Chicken with Cilantro Lime Rice. This was a delicious and easy 100/10 dinner recipe that will be added to the rotation for sure! Ingredients 8 chicken drumsticks 1 red bell pepper, sliced 1 yellow bell pepper, sliced 1 green bell pepper, sliced 1 white onion, sliced 2 cups chicken stock 1 1/2 tablespoons plain flour 1 tsp Worcestershire sauce 1 tablespoon all-purpose seasoning 1 tsp garlic powder 1 tsp onion powder 1 tsp paprika 1 tsp dried parsley ½ tsp dried thyme ½ tsp chilli flakes, or to taste Salt, to taste Black pepper, to taste Oil, for coating the chicken and vegetables Method Preheat the oven to 200°C (180°C fan). Season the chicken and vegetables, Toss everything together thoroughly so the chicken and vegetables are well coated. Transfer everything to a large baking dish, arranging the drumsticks amongst the peppers and onions. In a separate bowl or jug, whisk the flour into the chicken stock until smooth and there are no lumps. Pour the flour-and-stock mixture around and over the chicken and vegetables. Cover and bake: Cover the baking dish tightly with foil and bake at 200°C for about 45 minutes Remove the foil and continue baking for another 20–25 minutes, allowing the chicken to brown and the gravy to thicken. For extra colour and caramelisation, place the dish under the broiler/grill for a few minutes until the chicken is beautifully browned. Keep a close eye on it. Cilantro lime Rice 2 cups basmati rice, washed Water (as per rice cooking instructions) 1 tablespoon butter 1 teaspoon salt, or to taste 1 lime ¼ cup (15–20 g) fresh cilantro, finely chopped Rinse 2 cups of rice thoroughly under cold water until the water runs mostly clear. Transfer the rice to a saucepan and add the appropriate amount of water. Add the butter, salt and the juice of half a lime. Bring to a boil, then reduce the heat and cook according to your usual rice-cooking method until the water has been absorbed and the rice is tender. Once cooked, turn off the heat and leave the rice covered in the saucepan for 10 minutes. This allows the remaining steam to finish cooking the grains and helps achieve a light, fluffy texture. Remove the lid and add the juice from the remaining half of the lime, followed by the freshly chopped cilantro. Gently fluff the rice with a fork, folding the cilantro and lime through the rice without breaking up the grains. Serve immediately alongside the smothered chicken. #DinnerIdeas #EasyRecipes #quickmeals #homecooking #healthymeals" has 86,763 views, 3,584 likes, 26 comments, 448 shares in the public metrics captured by this index.
