Dinner for two Ingredients 200g pasta 2 large onions, thinly sliced 1½ tbsp butter 1 tbsp olive oil 2 garlic cloves, minced 2 tsp plain flour 1 tsp balsamic vinegar 400ml beef stock 100ml heavy/double cream 1 tsp Worcestershire sauce ½ tsp dried thyme Salt, to taste Black pepper 30–40g Parmesan Chopped parsley Method Caramelise onions: Heat butter + oil. Add onions and salt. Cook on medium-low for 25–30 minutes, stirring regularly, until deep golden. Add garlic and thyme. Cook for 1 minute. Add balsamic vinegar and cook for 30 seconds. Sprinkle in flour and stir for 1–2 minutes. Gradually stir in beef stock and Worcestershire sauce. Add 200g uncooked pasta directly to the pan. Simmer gently, stirring frequently, for 10–14 minutes until cooked. Stir in the 100ml cream and simmer for another 1–2 minutes. Add parsley and Parmesan. If it's too thick, loosen with a splash of water.
