🌯 GRILLED CHICKEN WRAPS For the chicken: • 500g chicken breast & thighs, cut into bite-sized pieces • 1 tsp curry powder • 1 tsp paprika • ½ tsp cumin • ½ tsp black pepper • 1 tbsp garlic paste • 1½ tbsp oyster sauce • Salt to taste • 1 tbsp oil • Extra oyster sauce, for cooking For the sauce: • Greek yogurt • Homemade chilli oil with garlic & onion bits • ½ tsp smoked paprika • Salt, to taste For assembling: • Tortilla wraps • Lettuce • Cucumber, diced • Yellow bell pepper, diced • Red onion, diced • Extra sauce METHOD 👇🏽 1️⃣ Marinate the chicken: Add the chicken to a bowl with curry powder, paprika, cumin, black pepper, garlic paste, oyster sauce, salt and oil. Mix well and marinate for 1 hour. 2️⃣ Cook the chicken: Heat a pan and cook the chicken over low heat, allowing it to cook gently and stay juicy. Add a little more oyster sauce towards the end and cook until nicely coated and fully cooked through. 3️⃣ Make the sauce: Mix Greek yogurt with homemade chilli oil, including the garlic and onion bits. Add smoked paprika and mix until smooth and creamy. 🌶️ 4️⃣ Assemble: Lay out a tortilla and spread over some sauce. Add lettuce, chicken, diced cucumber, yellow pepper and onion, then finish with another drizzle of sauce. 5️⃣ Wrap & grill: Fold the tortilla tightly into a wrap and place it seam-side down on a hot grill pan.
