Video insights
@heyelle_budgetmeals's TikTok video "Ingredients: 4-6 bone-in, skin-on chicken thighs (or boneless, skinless) 1 tsp salt, plus more to taste black pepper to taste 3–4 cloves garlic, minced cooking oil 3–4 medium carrots, peeled and sliced into ½-inch rounds 1 large onion, sliced 1 large bell pepper (any color), sliced 5 tbsp tomato paste ⅓ cup pineapple juice ½ cup water 1 tsp chicken bouillon powder ½ tbsp Worcestershire sauce Instructions: Pat chicken dry. Season both sides generously with salt, pepper, and garlic powder. Heat oil in an oven-safe skillet or Dutch oven over medium-high heat. Sear chicken skin-side down for 4–5 mins until golden, flip and sear other side for 3 mins. Transfer chicken to a plate. In the same pan, lower heat to medium. Add carrots and cook for 2–3 mins, stirring. Add onions and bell peppers, sauté until onions are translucent and peppers soften slightly (about 3–4 mins). Sauté garlic - I didn’t have any. Push veggies to the side, add the tomato paste to the center of the pan. Cook and stir it for 1–2 minutes until it darkens and becomes fragrant (this removes the raw tinny taste). Then stir everything together. Pour in pineapple juice, water, chicken bouillon, and Worcestershire sauce. Scrape up any browned bits from the pan. Stir well and bring to a gentle simmer. Taste the sauce and sprinkle in additional salt if needed (remember it will concentrate as it bakes). Nestle the seared chicken back into the pan, skin-side up, spooning some sauce over the top. Transfer the entire pan to the oven (uncovered) and bake at 325°F for 30 minutes. Remove from oven, rest for 5 mins, then serve hot over steamed rice. Spoon extra sauce and veggies over the top. Serve over rice. 👉🏽 If you are tired of the rising cost of groceries, and you are tired of having to think about what’s for dinner, and you don’t wanna have to plan out a grocery list and would prefer to just click one button to add your entire week of ingredients to cart… 👉🏽 My meal plans will make cooking easy and less stressful and each meal is made with simple and affordable, ingredients without sacrificing flavor. 👉🏽 Available in my bio" has 5,639 views, 232 likes, 11 comments, 18 shares in the public metrics captured by this index.
