Make the sauce first and set it aside. 2. Boil somyun for about 3 mins. Once the water starts boiling over, add a little cold water each time. (Usually after adding cold water 3 times, the noodles are perfectly cooked.) 3. Rinse the noodles in cold water, squeeze out excess water, and place in a bowl. Pour over the sauce. 4. I topped mine with cos lettuce, seaweed, and a lot of fried shallots.
