@kyfitjourney's TikTok video "My Creamy Chicken & Leek pie is just what you need on a cold day✨🥧🍂 Here’s The Full Recipe👇🏽 Ingredients 600g chicken breast, diced 1 tbsp olive oil 1 leek, finely chopped 1 onion, diced 200g chestnut mushrooms, sliced 3 garlic cloves, crushed 1 tbsp Dijon mustard 500ml chicken stock 100g cream cheese 50g smoked Applewood cheese, grated 1 tsp paprika 1 tsp dried oregano Salt and black pepper, to taste 1 sheet ready-rolled puff pastry 1 egg, beaten (for the egg wash) Instructions 1. Season the chicken: Add the diced chicken breast to a bowl and season with paprika, dried oregano, salt and black pepper. Mix well to coat evenly. 2. Brown the chicken: Heat the olive oil in a large pan over medium-high heat. Add the chicken and fry until golden on the outside. It doesn’t need to be fully cooked through at this stage. Remove from the pan and set aside. 3. Cook the vegetables: In the same pan, add the chopped leek, diced onion and sliced chestnut mushrooms. Sauté for around 6–8 minutes until softened. Add the crushed garlic and cook for another minute. 4. Make the sauce: Stir in the Dijon mustard, then pour in the chicken stock. Mix well, scraping up any flavourful bits from the bottom of the pan. 5. Simmer the filling: Return the chicken to the pan and simmer gently for around 10–15 minutes, or until the chicken is cooked through and the sauce has reduced slightly. 6. Add the cheese: Stir in the cream cheese until smooth, then add the grated smoked Applewood cheese. Mix until melted and creamy. Taste and adjust the seasoning if needed. Allow the filling to cool before assembling the pie. 7. Assemble the pie: Preheat the oven to 200°C conventional / 180°C fan / Gas Mark 6. Transfer the cooled filling to an ovenproof pie dish. Lay the puff pastry over the top, trim any excess and press the edges down to seal. Cut a small slit in the centre to allow steam to escape. 8. Egg wash and bake: Brush the pastry with beaten egg and bake for 25–30 minutes, or until the pastry is puffed up and beautifully golden. 9. Serve: Allow the pie to rest for 5 minutes before serving. Enjoy with buttery mash, your favourite greens & plenty of hot gravy! #EasyRecipes #cookwithme #DinnerIdeas #cozyseason #mealinspo" has 32,025 views, 1,714 likes, 3 comments, 30 shares in the public metrics captured by this index.
