Roast at 200°C fan for around 35–40 minutes, or until the vegetables are soft and nicely roasted. 4. Squeeze the roasted garlic out of its skin and transfer everything to a blender. Blend until smooth. 5. Stir through a few spoonfuls of low-fat cream cheese and a handful of grated cheese. Add a splash of pasta water if needed to loosen the sauce. 6. Cook your pasta according to the packet instructions, reserving some pasta water before draining. 7. Toss the pasta through the roasted veggie sauce, adding pasta water until you get your preferred consistency. 8.
