Before draining, reserve 1 cup of pasta water and set aside. In a large skillet, add the olive oil, fresh sage leaves and garlic and cook over medium heat for 1 minute, or until aromatic. Add the whole can of pumpkin to the skillet and season with salt, pepper and nutmeg. Cook for 3 minutes until slightly deeper in color. Add milk or heavy cream and parmesan and stir to combine. Taste and adjust seasonings. Add the pasta into the sauce and slowly add pasta water until you have a glossy sauce that coats the pasta.
