Cinnamon Roll Cookie Bars 🍂✨ (recipe makes an 8x8 pan) Ingredients: ¾ cup (170g) unsalted butter, melted 1¼ cups (250g) brown sugar, packed 2 eggs + 1 egg yolk, room temp 2 tsp vanilla extract 1½ cups (180g) all-purpose flour, spooned & leveled or weighed (don’t pack it in) 1 tsp cornstarch ¼ tsp baking powder ½ tsp salt ½ tsp cinnamon Cinnamon sugar swirl: ¼ cup (50g) brown sugar, packed 2 tsp cinnamon Cream cheese drizzle: 2oz cream cheese, room temp 1 tbsp (14g) unsalted butter, room temp ½ cup (60g) powdered sugar ½ tsp vanilla extract 1-2 tbsp milk (adjust for desired consistency) Instructions: Preheat oven to 325°F (163°C) and line/grease an 8x8-inch pan with parchment. In a large bowl, whisk melted butter and brown sugar until smooth. Mix in the eggs and vanilla until fully combined. In a separate bowl, whisk together the flour, baking powder, cornstarch, cinnamon, and salt. Fold the dry ingredients into the wet mixture until just combined. Don’t over mix. Spread the batter into the prepared pan. In a small bowl, combine the cinnamon and sugar. Sprinkle the cinnamon sugar evenly over the top of the batter. Using a knife/chopstick/skewer, swirl it into the batter. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean/with a few moist crumbs. Let it cool completely. To make the icing, mix the cream cheese and butter together until combined. Add the powdered sugar, vanilla, and milk, mix until smooth. Drizzle over the cooled bars.
