Video insights

@britscookin's TikTok video "Cajun Garlic Stuffed Pot Roast! My butcher labeled this a chuck roast… I’ve never seen a chuck roast that looked quite like this BUT that’s what we’re calling it! Either way, it was delicious and with the “ber” months only a few days away, I’m ready for all the cozy meals!!🤎 Ingredients * 1 chuck roast, about 3–4 lbs * 6–8 whole garlic cloves, plus 3–4 cloves minced * Garlic salt, to taste * Black pepper, to taste * Britscookin Cajun Seasoning, to taste * 1–2 tbsp oil * 1 medium onion, chopped * 1 green bell pepper, chopped * 2 celery stalks, chopped * 2 tbsp all-purpose flour * 3–4 cups beef broth or water, as needed * ~1 lb baby potatoes or chopped potatoes * 3–4 carrots, cut into chunks Directions 1. Season the roast really well on all sides with garlic salt, black pepper, and Britscookin Cajun Seasoning. 2. Heat a little oil in a Dutch oven over medium-high heat. Add the roast and get a good brown on both sides, then remove it from the pot. 3. Make several small slits throughout the roast and stuff a whole garlic clove into each one. 4. Into that same pot, add the onion, bell pepper, and celery. Cook for a few minutes, scraping up all those good browned bits from the bottom! Add the minced garlic and cook for another 30 seconds. 5. Sprinkle in the flour and stir it into the vegetables. Let it cook for about a minute, then slowly pour in the beef broth or water, stirring everything together. Add enough liquid to come partway up the roast. 6. Add the roast back to the pot, cover, and bake at 325°F for about 2½–3 hours. 7. Add the carrots and potatoes around the roast, cover again, and return to the oven for another 1–1½ hours, or until the roast is fall apart tender and the vegetables are cooked through. 8. Shred or slice the roast and serve with mashed potatoes or over rice. Those garlic cloves stuffed inside get super soft and melt right into the meat. Note: Cooking time will depend on the size and cut of your roast. If it isn’t pulling apart easily yet, give it a little more time. #potroast #comfortfood #yum #fallrecipes" has 149,110 views, 14,357 likes, 34 comments, 891 shares in the public metrics captured by this index.
