This Cookie Monster cheesecake cake was TOO GOOD😍 almost too pretty to eat🤭 RECIPE: CAKE (use 2 boxes of cake mix TOTAL, you’ll be making 2 cakes, the recipe below is for 1 cake)- 1 box @Duncan Hines French vanilla or vanilla cake mix (either works) 3 eggs 1 tbsp vanilla extract or bean paste 1 cup milk of choice (I used @Chobani extra creamy oat) 10-12 drops blue food coloring (depending on how vibrant you want the color) 1/2 cup (1 stick) melted unsalted @Kerrygold USA butter Mix until smooth and then spray your baking pan & add batter. Bake for 35-40 minutes on 350 degrees or until a toothpick comes out clean. Allow to cool on the counter for 30 minutes before placing your 2 cakes in the fridge. CHEESECAKE- 3 SOFTENED 8oz blocks @Philly Cream Cheese cream cheese 1/2 cup white sugar 1 tbsp vanilla extract or bean paste 1/3 cup heavy cream 1/3 cup sour cream 5 eggs total (added 3 first, then the remaining 2) Blend until smooth and all lumps are gone and then add your crushed @Chips Ahoy! cookies and fold in. Add your batter to a sprayed pan and bake for 1 hour on 350 degrees. Allow to cool on the counter for about 30 minutes, remove from the pan & then place into the freezer to set. BLUE BUTTERCREAM- 2 200g blocks softened unsalted butter 5-6 drops blue food coloring 3 & 1/2 cups powdered sugar Blend until smooth and stiff peaks form then set aside. Cut the tops off of both of your cakes to leave them & then to a cake board, add a little frosting to the bottom and then add your first cake on top, layer more frosting in between and then add your cheesecake to the middle. Add another layer of frosting and then top with your 2nd cake. Frost your entire cake and then cover the bottom half with crushed chips ahoy. Add a chocolate drizzle to the top by melting @Hershey's chocolate chips with coconut oil & then you can decorate the top of your cake as you’d like (I added swirls, crushed chips ahoy & @OREO cookies.
