@caitlynskitchen's TikTok video "Chicken Alfredo Tortellini Soup This soup is an easy one-pot dinner that’s perfect for a cozy night! Ingredients 1 lb chicken breast, cubed 2 tbsp butter 1 sweet onion, diced 3 large carrots, diced Salt and black pepper, to taste 1 tsp garlic powder 1/4 cup all-purpose flour 4 cups chicken stock 1 cup heavy cream or half-and-half 18 oz cheese tortellini 1 (6 oz) bag shredded Parmesan cheese 3 cups fresh spinach 1 tsp crushed red pepper flakes Directions 1. Melt the butter in a large pot or Dutch oven over medium heat. Add the diced onion and carrots. Season with salt, pepper, garlic powder, and poultry seasoning. Cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften. 2. Sprinkle the flour over the vegetables and stir well until everything is evenly coated. Cook for 1–2 minutes. 3. Slowly pour in the chicken stock, stirring continuously to incorporate the flour and create a smooth broth. 4. Add the cubed chicken breast and bring the broth to a boil. Reduce the heat to a simmer and cook until the chicken is cooked through. 5. Stir in the heavy cream or half-and-half, followed by the cheese tortellini. Cook according to the package directions until the tortellini are tender. 6. Reduce the heat to low and gradually stir in the shredded Parmesan cheese until melted and the soup is creamy. 7. Add the fresh spinach and crushed red pepper flakes. Stir for 1–2 minutes, or until the spinach is wilted. 8. Remove from the heat and let the soup sit for about 10–15 minutes before serving. This gives the soup time to thicken and allows all those flavors to come together. Serve warm with extra Parmesan and crushed red pepper on top! Recipe Note The tortellini will continue to soak up the broth as the soup sits, so don't worry if it initially looks a little thinner than you'd like. It will thicken considerably as it rests. If you have leftovers, the tortellini will continue absorbing liquid overnight in the refrigerator. When reheating, simply add a splash of chicken stock, milk, half-and-half, or cream to loosen the soup back up to your desired consistency. #EasyRecipe #DinnerIdeas #soupseason #easydinner #quickrecipes" has 568,381 views, 31,783 likes, 108 comments, 8,776 shares in the public metrics captured by this index.
