Drain very well. Spread the noodles on a paper towel, or clean kitchen towel, and pat them dry. The drier they are, the better they’ll crisp. Season Noodles: Add the noodles to a bowl, and toss with the Buldak sauce packet, neutral oil, cornstarch, optional seasoning powder, and Parmesan or mozzarella. The noodles should be coated, glossy, and lightly tacky. Make Ramen Chips: Heat the oven to 375°F. Lightly spray the baking sheet with nonstick spray. Add small forkfuls of noodles in flat clusters, about 2 to 3 inches wide. Press each cluster down slightly so it forms a chip-like nest. Bake on a parchment-lined sheet pan for 18-22 minutes, flipping once, until crispy. Make Buldak Crema: Mix the sour cream or crema, Buldak sauce, lime juice, and honey until smooth. Set aside. Make Spicy Queso: Melt the butter in a small saucepan over medium-low heat. Add garlic, and cook for about 30 seconds. Add evaporated milk or cream, and warm gently. Reduce heat to low, then add the cheese a little at a time, stirring until smooth. Stir in the Buldak sauce and lime juice. Add milk or water, 1 tablespoon at a time, if needed, until the queso is pourable. Assemble Nachos: Arrange the crispy ramen chips on a platter or sheet pan. Pour the spicy queso over the top. Add pico de gallo, pickled jalapeños, avocado, cilantro, and cotija, if using." has 34,636 views, 882 likes, 58 comments, 25 shares in the public metrics captured by this index.
