BBQ Pineapple Crunch Chicken Ingredients * Boneless, skinless chicken breasts * Olive oil, for drizzling * Salt & black pepper, to taste * Britscookin Cajun Seasoning, to taste * BBQ sauce, as needed * Pineapple rings, one per chicken breast * Shredded pepper jack cheese * Shredded provolone cheese * Crispy fried onions Instructions 1. Preheat oven to 425°F. 2. Place chicken breasts in a baking dish and drizzle with a little olive oil. Season with salt, black pepper, and Britscookin Cajun Seasoning. My Cajun seasoning isn’t overly salty and adds the perfect little bit of heat to balance out the sweet BBQ sauce. 3. Drizzle BBQ sauce over each piece of chicken. I used G Hughes Sugar Free BBQ Sauce to keep this one a little healthier, but feel free to use whatever BBQ sauce you like! 4. Add a pineapple ring to each piece of chicken, then top with shredded pepper jack and provolone cheese. 5. Finish with crispy fried onions. I like to crumble mine up a little so they’re nice and small and you get that crunch in every bite. 6. Bake at 425°F until the chicken reaches an internal temperature of 165°F. Cooking time will vary depending on the thickness of your chicken breasts. I served mine over roasted cubed sweet potatoes with green beans on the side.
