@audreybakes's TikTok video "Apple Pie Cinnamon Rolls 🍎🥧🍂 (recipe makes 8 large rolls) Apple Filling: 3 medium apples peeled, cored, & diced small (~450g) 3 tbsp (42g) unsalted butter ⅓ cup (67g) packed brown sugar 1 tsp lemon juice 1½-2 tsp cinnamon ⅛ tsp nutmeg Pinch salt 1 tbsp cornstarch + 2 tbsp cold water 1 tsp vanilla Dough: 1 cup (240g) warm milk 1 packet (2¼ tsp/7g) instant yeast ¼ cup (50g) granulated sugar 1 egg + 1 egg yolk, room temp ¼ cup (57g) melted unsalted butter ~3¼-3½ cups (390-420g) bread flour (start low & only add more if needed) 1 tsp salt + ⅓ cup (80g) warm heavy cream to pour over rolls right before baking Filling: 6 tbsp (85g) softened unsalted butter ⅔ cup (133g) brown sugar, packed 2 tsp cinnamon Icing: 6 oz (170g) cream cheese, room temp ¼ cup (57g) unsalted butter, room temp 1½ cups (180g) powdered sugar ¾ tsp vanilla Pinch salt Instructions: Heat diced apples, butter, sugar, lemon juice, cinnamon, & nutmeg over medium heat until juicy & simmering. In a small bowl combine cornstarch & water to create a slurry. Slowly stir the slurry into the apple mixture. Cook until thickened/more jammy. Transfer to a heat safe bowl & stir in vanilla. Let it cool. Combine warm milk, sugar, & instant yeast. *if using active dry yeast, gently stir it & let it sit 5-10 min until foamy before proceeding. Add egg, egg yolk, & melted butter, mix. Stir in salt & flour. Mix until a soft dough forms. Knead dough for 8-10 min. Place in a lightly greased bowl, cover, & let rise for 1-1½ hrs/until doubled. For the filling, mix the soft butter, brown sugar, & cinnamon until combined/spreadable. Roll dough into a large rectangle on a lightly floured surface. Spread the filling evenly over it, followed by a layer of the apple filling. *don’t overstuff it! save at least ⅓ of the apple filling for topping later. I like to use a pizza cutter to first slice 8 pieces then roll them each up. (Or you can tightly roll the whole thing then slice) Place in greased 9x13 pan. Cover & let rise ~30 more min. Pour warm heavy cream over the rolls right before baking. Bake at 350°F for 22-28 min until golden. For the icing, beat cream cheese & butter together until smooth. Then, beat in powdered sugar & vanilla until fully combined. Spread over the warm rolls. Add leftover apple filling on top.
