Cheesy Chicken Fajita Stuffed Flatbread 🧀🌶️ Crispy and golden on the outside, filled with juicy fajita chicken, colorful peppers and lots of melty mozzarella. Chicken Fajita Filling: 400 g boneless skinless chicken thighs, cut into short strips 1 tbsp oil ½ red bell pepper, sliced ½ green bell pepper, sliced ½ red onion, sliced 2 garlic cloves, minced 1 tsp paprika ¾ tsp mild red chili powder ½ tsp garlic powder ½ tsp onion powder ½ tsp cumin ½ tsp oregano ¼ tsp black pepper Salt to taste 1 tbsp lime juice Cheese: 1½–2 cups shredded mozzarella Flatbread Dough: 2 cups all-purpose flour 1 tsp salt 2 tbsp oil About ¾ cup warm water, added gradually Method: 1. Mix flour and salt. Add oil, then gradually add warm water until a soft dough forms. Knead for 4–5 minutes, cover and rest for 20–30 minutes. 2. Season the chicken with oil, paprika, chili powder, garlic powder, onion powder, cumin, oregano, black pepper and salt. Let it sit for 15–20 minutes if you have time. 3. Cook the chicken over medium-high heat until golden and cooked through. Remove from the pan. 4. In the same pan, sauté the onion and bell peppers until slightly softened. Add garlic and cook for another 30 seconds. 5. Add the chicken back in, toss everything together and finish with lime juice. Let the filling cool. 6. Divide the dough into 6 portions and roll each one fairly thin. 7. Add mozzarella to one half, followed by the chicken fajita filling and another layer of mozzarella. 8. Fold into a half-moon and seal the edges. 9. Cook in a lightly oiled pan over medium heat for about 2–3 minutes per side until golden and blistered and the cheese is melted.
