Save this for your next pasta night! ❤️ 📝 Ingredients Chicken • 250 g boneless, skinless chicken thighs, diced • 1 tbsp oil Seasoning • 1 tsp paprika • ½ tsp smoked paprika • ½ tsp garlic powder • ½ tsp onion powder • ¼ tsp cumin • ¼ tsp oregano • ¼ tsp black pepper • ¼–½ tsp chili flakes, optional • Salt to taste Pasta • 150 g cellentani, cavatappi, or medium shells • ¼ cup reserved pasta water Vegetables • ½ medium onion, finely diced • ½ red bell pepper, diced • ½ green bell pepper, diced • 2 garlic cloves, minced Sauce • 1 cup warm whole milk • ½ cup heavy cream • ½ tsp paprika • ¼ tsp smoked paprika • Salt and black pepper to taste Cheese • ¾ cup shredded cheddar • ¾ cup shredded mozzarella 👩‍🍳 Method 1. Season the chicken and marinate for 15–20 minutes. 2. Cook the pasta until al dente. Reserve ¼ cup pasta water and drain. 3. Cook the chicken until golden and cooked through, then remove from the pan. 4. Sauté the onion and peppers until softened. Add the garlic and cook for 30 seconds. 5. Stir in the paprika and smoked paprika for 15–20 seconds. 6. Add the warm milk and heavy cream and bring to a gentle simmer. 7. Stir in the cheddar and mozzarella until creamy. 8. Add the pasta and a splash of pasta water if needed. 9. Fold the chicken back in and toss until everything is coated. 10. Finish with parsley, black pepper, and chili flakes.
