Cook bacon in a large pot until crispy. Remove and set aside, leaving a little bacon grease behind. 2. Add sausage and brown for 3–4 minutes. Remove and set aside. 3. Add butter and onion to the pot. Cook until softened, then stir in garlic. 4. Add potatoes, chicken broth, Cajun seasoning, smoked paprika and cayenne. 5. Bring to a boil, then reduce heat and simmer about 15–20 minutes until the potatoes are fork tender. 6. Lightly mash some of the potatoes right in the pot to thicken the soup. 7. Stir in heavy cream, cheddar cheese and sausage. Simmer on low until creamy and heated through. 8. Taste and adjust seasoning. 9. Top with crispy bacon, extra cheddar, green onions and a little Cajun seasoning.
