Heat a little oil in a pan over low heat. Add curry powder and turmeric, then stir briefly. 2. Add the red onion, red and green bell peppers, tomatoes and spring onions. Cook for about one minute, stirring occasionally. 3. Add the garlic, ginger and coriander paste. Mix well and cook until fragrant. 4. Add the diced potatoes and mix to coat them in the spices. 5. Add the carrots and vegetable stock. Cover and simmer until the potatoes are partially cooked. 6. Add the fresh thyme and okra. Stir gently, cover and cook until the potatoes are tender and the okra is cooked. 7. Pour in the coconut cream and add a little water to achieve your desired consistency. 8. Simmer for a few more minutes, then serve warm with ugali, rice or chapati.
