Make the meatballs: Mix minced chicken with onion, breadcrumbs, paprika, curry powder, salt, coconut cream and egg. Shape into evenly sized balls with lightly oiled hands. 2. Brown: Preheat a stainless-steel pan over medium heat. Use the water-droplet test, then add oil and brown the meatballs on both sides. Remove and set aside. 3. Make the curry: In the same pan, sauté garlic, Thai red curry paste, curry powder and turmeric. Add a little water to deglaze the pan and lift all those flavourful browned bits. 4. Add coconut cream, stir and bring to a gentle simmer. 5. Finish: Return the meatballs to the curry, spoon the sauce over them, cover and simmer for a few minutes. 6.
