LINK IN BIO CREAMY MASH POTATOES Ingredients: 3 medium Russet potatoes 3 medium yellow potatoes 1/2 block of cream cheese 1/2 stick of butter About 1 cup of milk (You can use any potatoes you have but half russet half golden is how I like it) Boil potatoes in salted water. Length of time will depend on size of potatoes. Poke them with a fork every now and then and be sure not to overcook. In a small bowl, soften the half a stick of butter and half a block of cream cheese in the microwave. 10-20 second increments. Once potato is cooked, drain water. Dump the cream cheese, butter, half a cup of milk and salt to taste in with the potatoes. Start mashing. Slowly keep adding milk and keep smashing to reach your desired texture and consistency. Minimize the amount of mashing to avoid turning the potatoes gummy. Adjust taste by adding more butter, salt and cream cheese. Make sure to soften the butter and cream cheese in the microwave before adding. If you don’t want to overdo mashing, use a spatula to fold the butter and cream cheese in.
