Cheesy Beef Taquitos Ingredients • 2 pounds ground beef • ½ onion, diced • 2 tablespoons tomato paste • 2 ounces taco seasoning • 1 cup Gordo’s Homestyle Recipe Queso Dip • ½ cup water • 16 ounces shredded mozzarella cheese • About 15 fajita-size flour tortillas • Cooking oil, for frying For Serving • Gordo’s Homestyle Recipe Queso Dip, warmed • Sour cream • Avocado lime ranch Instructions Brown the ground beef and diced onion in a large skillet over medium heat. Once the beef is fully cooked, drain off any excess grease. Stir in the tomato paste and cook for another 2 minutes. Add the taco seasoning, 1 cup of Gordo’s Homestyle Recipe Queso Dip and ½ cup water. Stir everything together and let it simmer for a few minutes, then remove it from the heat and allow the mixture to cool slightly. To assemble the taquitos, sprinkle some shredded mozzarella onto each tortilla and add a couple spoonfuls of the beef mixture. Roll each tortilla up tightly. Add about 1 inch of cooking oil to a large skillet and heat over medium heat. Working in batches, add the taquitos seam-side down. Fry for about 6–8 minutes total, turning every few minutes, until they’re golden brown and crispy on all sides. Transfer the cooked taquitos to a paper towel-lined plate to drain. Serve them hot with warm Gordo’s Homestyle Recipe Queso Dip, sour cream and avocado lime ranch for dipping!
