Prepare the cookie dough by creaming the softened butter, granulated sugar, and brown sugar until light and creamy. Add the egg and vanilla bean paste and mix until fully combined. Add the flour, baking soda, and salt, mixing just until the dough comes together. Fold in the chocolate chips. Freeze the dough until firm enough to handle. Scoop the dough into balls and flatten each one into a disc. Place a frozen portion of white hazelnut spread and Nutella in the center of each disc, then carefully wrap the cookie dough around the filling, sealing the edges completely. Roll into smooth balls and place on a lined baking sheet. Bake at 350°F (175°C) for 12–15 minutes, or until the edges are lightly golden and the centers are still slightly soft.
