Cut the onion in half. Then cut 1/2-inch wide onion rings. Pull the layers apart carefully so as not to break them. Use the 4 largest rings. Place a Babybel cheese disc in the middle of an onion ring, then add ground beef around the cheese, making sure cheese stays in the center. Completely cover it with ground beef. Flip meat patty over and use a little ground beef to cover the other side of the cheese. Season both sides with BBQ seasoning. Wrap onion ring burger with 2 or 4 bacon slices. Place onion ring burgers in a preheated smoker and smoke for 1 1/2 hours, carefully flipping them after 90 minutes. Drizzle BBQ sauce on top for the last 10 minutes of smoking.
