Ingredients: 3 lbs Yukon Gold potatoes, sliced ⅛-inch thick 3 tbsp unsalted butter 150 g Boursin garlic & herb cheese 1 cup shredded mozzarella 2 cups milk 1 cup salted vegetable or chicken broth ¼ cup all-purpose flour 1 small yellow onion, sliced ¼ tsp salt ¼ tsp black pepper 2 tbsp fresh chives, chopped Cooking spray Directions: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish. Melt butter in a saucepan. Add sliced onion and cook for 2–3 minutes until softened. Whisk in flour and cook for 1 minute.
