Now for some mushroom science 🧐🤓 I only learnt about boiling mushrooms a few years ago from the legendary mushroom expert Jim Fuller (@jimboilsmushrooms). Now, he will be able to explain this infinitely better than me, but from my understanding and in simpler terms: Boiling mushrooms in water first helps them release their natural moisture first instead of absorbing too much oil to begin with. Once the water evaporates, they can brown much more effectively through the ✨Maillard Reaction✨ giving them both better flavour and texture instead of turning soggy or greasy. You'll also notice that you need A LOT LESS oil/fat when cooking them this way! Whereas usually they'd be sponges soaking up a tonne of oil then releasing liquid again, preventing you from being able to fry them off properly (unless you keep adding more oil in).
