And the best part is you only need a few simple ingredients. Start with 2–3 medium potatoes and cut them into small bite-sized cubes. I like leaving the skin on because it gives them a more rustic texture and helps the edges get extra crispy in the air fryer. Add the potato cubes to a bowl and pour over about 2 tablespoons melted butter. Toss everything really well so each piece gets lightly coated. Next, add about ½ cup grated Parmesan and mix again until the potatoes are covered.
