Pour in chicken broth, scraping up the browned bits. Simmer for 2 minutes, then stir in cream, both mustards and thyme. 5. Return chicken to the skillet, skin-side up, keeping the skin above the sauce. Bake uncovered for 20–30 minutes, until the thickest part reaches at least 165°F, without touching the bone. 6. Transfer chicken to a plate. Stir lemon juice into the sauce and simmer gently on the stovetop if it needs thickening. Taste and adjust seasoning. 7.
