jumbo cheesy cheeseburger burritos🌯✨ recipe: ( makes 6 big burritos ) caramelized onions: 3 large yellow onions, thinly sliced 2 tbsp butter 1 tbsp olive oil 1 tbsp sugar salt, to taste cook the onions with the butter, olive oil, sugar, and a little salt over medium heat, stirring occasionally, until deeply caramelized and golden. this takes a while, so be patient lol. set aside. burger sauce: ½ cup mayonnaise 2 tbsp ketchup 1 tbsp yellow mustard 2 tbsp finely chopped dill pickles 2 tbsp caramelized onions 3 tbsp pickle juice chili powder, to taste paprika, to taste parsley, to taste garlic & onion powder, to taste salt + black pepper, to taste a pinch of cayenne a little chicken bouillon, to taste mix everything together and set aside until ready to assemble. burger meat: 2 lbs 91/9 ground beef ½ yellow onion, finely chopped 1 tbsp olive oil 2–3 cloves garlic, minced 2 heaping tbsp tomato paste ½ cup water chili powder, to taste garlic & onion powder, to taste chicken bouillon, to taste red pepper flakes, to taste black pepper, to taste salt, if needed heat the olive oil in a large skillet and cook the chopped onion until softened. add the garlic toward the end so it doesn’t burn. add the ground beef and cook until mostly browned, breaking it up as it cooks. add your seasonings, then stir in the tomato paste. pour in about ½ cup water and mix everything together. let it simmer for a few minutes until it has come together. set aside. ( let cool slightly before assembling burritos ) for the burritos: 6 large burrito-size flour tortillas colby jack cheese pepper jack cheese burger sauce caramelized onions cooked burger meat olive oil, for crisping assemble each burrito with a generous amount of the burger meat, a mix of colby jack and pepper jack cheese, burger sauce, and caramelized onions. fold the sides in and roll tightly.
