Add the drained rice and gently toss to coat every grain in the ghee and spices. Let it cook for about 1–2 minutes. 6. Pour in the coconut milk and water, then add the salt. Stir gently once. 7. Bring to a gentle simmer, then cover tightly and cook on low heat for about 10–12 minutes, or until the liquid has been absorbed and the rice is tender. 8. Turn off the heat and let it rest, covered, for 5 minutes. 9. Gently fluff the rice with a fork.
