Cut the potatoes in half lengthwise, coat with a little oil and seasoning, and bake cut-side down at 375°F until fork tender. 2. Once soft, scoop some potato from the center of each half to create a well. Leave enough potato around the sides and bottom so they stay sturdy. 3. Add a pile of shredded cheddar to a hot skillet. Place each potato cut-side down directly onto the cheese and let it cook until the cheese forms a crispy golden crust. 4. Flip the potatoes over and, while the cheese is still hot, gently press the cheese in the center down into the potato well. 5. Add a small amount of egg white into each well and bake at 400°F until the white is mostly set. 6. Pull them out, gently add the egg yolk into the center, then return to the oven just long enough for the yolk to warm while staying runny. 7. Finish with crispy bacon, fresh chives and cracked black pepper.
