Cornbread + sweet potato pie?! A TOP TIER combo😮‍💨 make it & thank me later😍 RECIPE: DOUBLE THE RECIPE - CORNBREAD CAKE (you’ll be using 2 boxes of cake mix & 2 cornbread mixes) 1 box @Betty Crocker yellow cake mix, 1 box jiffy cornbread mix, 3 eggs, 1 tbsp vanilla extract or bean paste, 1 cup milk of choice, 2 tbsp honey & 1 cup (2 sticks) melted unsalted @Kerrygold USA USA butter. Mix until smooth and then spray your baking pan (I used 2 @Wilton Cakes 8x3in pans) & add batter evenly. Bake for 35-40 minutes on 350 degrees or until a toothpick comes out clean. Allow to cool on the counter for 30 minutes before removing from pan & placing your 2 cakes in the fridge. CHEESECAKE: 2 SOFTENED 8oz blocks of @Philly Cream Cheese cream cheese 1 cup white sugar 1 tbsp vanilla extract or bean paste 1/3 cup heavy cream 1/3 cup sour cream 3 eggs (room temperature) Blend until smooth and all lumps are gone and then add your batter to a sprayed pan. Bake for 40-45 minutes on 350 degrees then remove to work on your sweet potato filling to add on top. SWEET POTATO PIE FILLING: 2-3 sweet potatoes boiled until fork tender, then remove skin and add to a large bowl (about 2 cups), 1/3 cup white & brown sugar), 1 tsp vanilla, 1/3 cup @Carnation Milks evaporated milk, 1 tbsp pumpkin pie spice (contains all of your needed spices), 1 tbsp all purpose flour, juice of half a lemon, 1 egg, 1/3 cup melted butter. Blend until smooth & all strings are gone, then add on top of your cheesecake and bake for an additional 40 minutes. Allow to cool on the counter for about 30 minutes, remove from the pan & then place into the freezer to set for 4-5 hours. HONEY BUTTERCREAM- 2 200g blocks softened unsalted butter, 3 cups powdered sugar & a large spoonful of honey. Blend until smooth and stiff peaks form then set aside. Cut the tops off of both of your cakes to level them & then to a cake board, add a little frosting to the bottom and then add your first cake on top, layer more frosting in between and then add your cheesecake to the middle. Add another layer of frosting and then top with your 2nd cake. Frost your entire cake, add a honey drizzle on top along with swirls & crumbled cornbread (from the tops of the cakes cut earlier) on top.
