If you love carrot cake, this carrot cheesecake cake was made for you😍 make it & thank me later! RECIPE: CARROT CAKE: (this recipe makes 1 carrot cake, you’ll be making 2 in total) 1 cup white sugar 1 cup brown sugar 1/2 cup (1 stick) melted @Kerrygold USA unsalted butter 1 cup vegetable oil 1/3 cup applesauce 1/3 cup sour cream 1 tsp vanilla extract/bean paste 3 eggs (room temperature) Whisk together all wet ingredients until well combined Sift 2 & 1/2 cups all purpose flour 1 tsp allspice, cloves, cinnamon & nutmeg Pinch of salt 1 tsp baking soda & powder Whisk your dry ingredients together until combined Clean & grate your carrots (2 cups) - I used 2 different sized graters to get different size carrot pieces Add your dry ingredients to your wet mixture, along with your grated carrots and FOLD IN. Fold until well combined and then spray your baking pan & add batter (leave about 1/2 cup of batter to use for your cheesecake & to make a small cake to crumble). Bake for 1 hour on 350 degrees or until a toothpick comes out clean. Allow to cool on the counter for 30 minutes before placing your 2 cakes in the fridge. CHEESECAKE- 3 SOFTENED 8oz blocks @Philly Cream Cheese cream cheese 1/2 cup white sugar 1 tbsp vanilla extract or bean paste 1/3 cup heavy cream 1/3 cup sour cream 5 eggs total (added 3 first, then the remaining 2) Blend until smooth and then add half of your batter to a sprayed pan and then dollops of carrot cake & swirl in with a knife. Add your remaining cheesecake batter & then more carrot cake batter to the top and swirl again. Bake for 1 hour on 350 degrees. Allow to cool on the counter for about 20 minutes, remove from the pan & then place into the freezer to set. BROWN BUTTER FROSTING: 2 200g blocks melted brown butter (leave to cool for about 30 minutes in the fridge until it firms up) 3 cups sifted powdered sugar Blend until smooth and stiff peaks form then set aside. Cut the tops off of both of your cakes to level them & then add to a cake board, add a little frosting to the bottom and then add your first cake on top, layer more frosting in between and then add your cheesecake to the middle. Add another layer of frosting and then top with your 2nd cake. Frost your entire cake and then cover the bottom half with crumbled carrot cake pieces.
